Our flour is in the cooler at approx 36 degrees. You get the idea of how hot the water should be. Normally I will take out the flour that we will be using right when we arrive so it has some time to warm up.
8 lbs 8 oz Pride Donut Mix 1 quart water
8 lbs 12 oz Blueberry Mix 1 quart water
8 lbs 12 oz Cherry Mix 1 quart water
Mix at low speed 1 – 1 ½ minutes (Mixer setting 1)
Let rest at least 10 minutes but not more then 20 minutes
Fry at 375 degrees. If you warm up the shortening for re-stock on the stove, please make sure you heat it up at a low flame. We DO NOT want to add shortening that has been burned. That will spoil all the shortening and we will not be able to cook with it.
Ice donuts (blueberry and cherry) while WARM. Let sit until completely COOL
Cinnamon Sugar while WARM
Powdered Sugar while completely COOL
ALL donuts must be COOL before bagging them up.
Normally we make about 50 dozen. Each mix you make should make approx 12-14 bags of donuts.
1 batch of (blueberry or cherry)
3 batches of Barrett Pride (all are approximate amounts)
4 dozen plain
3 dozen powered
3 - ½ dozen cinnamon
2 – ½ dozen powered
2 – ½ dozen mixed (2 each/plain, cinnamon, powered)
15 dozen mixed (plain, cinnamon, powered)
15 dozen cinnamon
